Shakshouka / Shakshuka

Ingredients

  • 2 Eggs

  • 1 large onion finely chopped

  • 4-5 garlic cloves chopped

  • 3 tomatoes crushed or puréed

  • 1/2 bellpepper finely chopped

  • 1 spoon oregano mix

  • 1/2 teaspoon cumin powder

  • 1 teaspoon chili powder

  • 1/2 teaspoon sugar

  • Salt to taste

  • 1 tablespoon olive oil

 

Instructions

  1. Heat pan and add olive oil, add chopped onion and garlic and saute until onion is translucent.

  2. Add chopped bellpepper and saute for 2-3 mins.

  3. Add oregano and mix. Then add tomato purée.

  4. Add cumin powder, salt, chili powder and sugar.

  5. Add 1/2 cup water and let it simmer on low flame for 6-7 mins.

  6. Once the water is reduced to half, make two indentations or wells.

  7. Crack eggs and carefully drop them in each well.

  8. Close the lid and let it cook for 5-7 mins or until the egg yolk is firmly cooked.

  9. Sprinkle some fresh coriander or cilantro.

  10. Serve with your choice of bread.
