Veg Thai Green Curry

Ingredients

  • 1 large onion roughly chopped

  • 1 carrot diced

  • 1 thai eggplant diced (green-elongated brinjal)

  • 1/2 capsicum diced

  • 1 cup cauliflower florets, slightly blanched

  • 1 tablespoon chopped ginger garlic

  • 3/4 cup Thai green curry paste

  • 1 cup coconut milk

  • 1/4 cup water

  • 1/2 teaspoon sugar

  • Salt to taste

 

Instructions

Veg Thai Green Curry

  1. Heat pan and add oil. Add chopped onions, ginger and garlic. Saute until onion turns translucent.

  2. Add diced thai eggplant and carrot and carrots. Saute until they're slightly tender.

  3. Next add capsicum and blanched cauliflower. Saute for 3-4 mins.

  4. Add the green curry paste and 2tbsp water and mix.

  5. Pour in the coconut milk, add 1.2tsp sugar and Salt and let it simmer for 10 mins or until vegetables are tender but not overcooked.

  6. Serve with Rice.
